New Year Resolutions

I love January... not the cold, but the chance that it gives you to really re-evaluate your live and make changes. After evaluating last year and planning for this one, our family has made some big changes.
First, after discovering that I was beginning to dread every waking moment of the school day (we were homeschooling our kids)and finding that I wanted to bite off, chew up and spit out anything that moved, we decided to put the kids back into public school. Now don't get me wrong, we loved the whole homeschool idea, the online school was GREAT...but I was not functioning properly and the kids were having a hard time understanding when MOM stopped and TEACHER began!
So...back to school they are and I am FINALLY on my own...ALONE, ALL ALONE! What is that like??? AWESOME!!! I have decided this is a great opportunity for me to focus on ME for a change. I have joined the gym with a friend, and I actually read a book, cleaned my house and took a long bath without anyone wanting ANYTHING!

Hello Everyone,

I don't even know if anyone is reading this anymore, I haven't written here for so long! It has been a CRAZY month, like I am sure all yours was also. Jim and I went away on a Hawaiian Cruize with some friends the first part of the month, and by the time we got back, it was Christmas. We went away right after Christmas to Utah to spend time with family...that was so fun to get to spend time with those we have not seen for a long time.

This last month we were able to have a great time with family in California. We spent the time enjoying Halloween in 70 degree weather, playing at Disneyland, having a bonfire at the beach and we also enjoyed the Aquarium of the Pacific in Long Beach. Jim was at a business meeting for the first few days we were there, so I braved the California roads on my own and drove to Long Beach. I thought I would have a panic attack driving there after our quiet high-ways, but we made it and had a great time!

I got this poem from my sister-in-law and it describes how I feel about womanhood today.

In this life I'm a woman
In my next life, I'd like to come back as a bear.
When you're a bear, you get to hibernate.
You do nothing but sleep for six months.
I could deal with that.
Before you hibernate, you're supposed to eat yourself stupid.
I could deal with that, too.
When you're a girl bear, you birth your children (who are the size of walnuts) whileyou're sleeping and wake to partially grown, cute, cuddly cubs.
I could definitely deal with that.
If you're a mama bear, everyone knows you mean business.
You swat anyone who bothers your cubs.
If your cubs get out of line, you swat them too.
I could deal with that.
If you're a bear, your mate EXPECTS you to wake up growling.
He EXPECTS that you will have hairy legs and excess body fat.
Yup...gonna be a bear.

I think I will try making these for neighbor gifts this year. No baking...just my speed!

Mint Thins

1 pkg. (8 squares) Baker's Semi-Sweet Chocolate

1/4 tsp. peppermint extract

1 sleeve Ritz Crackers (35 crackers)

1 peppermint candy cane (6 inch), crushed

Microwave chocolate in samll microwavable bowl as directed on package. Stir until completely melted. Blend in extract.

Dip crackers in melted chocolate, completely coating crackers iwth chocolate. Carefully scrape off excess chocolate. Place on wax paper-covered baking sheets; sprinkle with crushed candy.

Refrigerate 30 min. or until chocolate is firm.

Makes 35 or about 12 servings, 3 coated crackers each.

Variation: For a chocolate-peanut butter twist, omit peppermint extract and candy cane. Spread each cracker with a thin layer of peanut butter before dipping into the melted chocolate.

Welcome to our "BLOG"! First off I would like to warn you that most of the info on this site will be provided by me (Lori) and I don't claim to be clever, smart or a good speller...so take it for what it's worth! This is just one more creative outlet to take up what little time I have hanging around.

These two crazy kids take up most of my time since I am homeschooling this year. We keep really busy keeping up with studies and trying to keep this home a float!
